In a Large bowl mix:
2 Cups Flour
1 1/4 Cups White Sugar
2 Teaspoons Baking Soda
2 Teaspoons Cinnamon
1/2 Teaspoon Salt

Stir in:
2 Cups Grated Carrots
1/2 Cup Raisins
1/2 Cup Chopped Nuts
1/2 Cup Coconut
1 Apple (peeled and chopped)

In a separate bowl beat:
3 Eggs
1 Cup Salad Oil
2 Teaspoons Vanilla

Add the egg mixture to the flour mixture.  Mix until combined.  Fill muffin cups to top.  Back at 350 for 25 minutes or check with a toothpick.  Makes about 14.
